This innovation aims to develop a spread made from durian seeds as a value-added food innovation. Durian seeds, which are typically discarded as waste, were processed through cleaning, boiling, peeling, drying, and grinding before being blended with other ingredients such as sugar, butter, milk, and flavoring to produce a spread with a smooth texture and pleasant taste. The development of this product not only helps reduce food waste but also enhances the economic value of durian seeds as an alternative raw material. The product was evaluated based on its color, aroma, taste, texture, and consumer acceptance. The findings indicate that the durian seed-based spread has strong potential for consumer acceptance due to its creamy texture, distinctive flavor, and nutritional content, including carbohydrates and dietary fiber. Overall, this product has the potential to be commercialized as an innovative, environmentally friendly, and nutritious food that supports sustainable resource utilization.
