Peeluxe Brookies is an innovative bakery product that combines brownies and cookies by partially substituting wheat flour with banana peel flour, transforming an underutilized agricultural by-product into a nutritious and sustainable food ingredient. The innovation addresses the increasing demand for environmentally friendly and healthier bakery products while reducing food waste through the utilization of banana peels, which are rich in dietary fibre and beneficial nutrients. The novelty of Peeluxe Brookies lies in the incorporation of banana peel flour as a high-fibre alternative to conventional wheat flour, producing a value-added bakery product with improved nutritional quality and sustainability. This study aimed to develop a brookie formulation using banana peel flour and evaluate its quality and consumer acceptability. Banana peels were cleaned, dehydrated, milled into fine flour, and incorporated into the formulation before baking and product evaluation. The developed Peeluxe Brookies exhibited desirable texture, flavour, and overall quality, with increased dietary fibre and positive consumer acceptance. The utilization of banana peel flour effectively reduced agricultural waste while enhancing the nutritional value of the product and creating opportunities for the commercialization of value-added food products. Furthermore, this innovation promotes sustainable food production by encouraging the efficient use of agricultural resources and supporting responsible food consumption. Overall, Peeluxe Brookies demonstrate the potential of banana peel flour as a sustainable ingredient for developing nutritious, high-quality bakery products with environmental, economic, and social benefits
